Mini-Tasting Buffet Tomato Soup

Even the simplest of foods can look special if served in the popular mini containers. This delicious and colorful soup would be great for any mini tasting buffet that you might want to plan for the new year.

Ingredients:
1 (28 ounce) can Italian-seasoned diced tomatoes
1 (32 ounce) container chicken broth
1 (26 ounce) can tomato soup
1/2 teaspoon freshly ground pepper
Toppings: chives, heavy cream, Parmesan crisps

Directions:
Pulse tomatoes in a food processor 3 to 4 times or until finely diced. Stir together tomatoes and next 3 ingredients in a Dutch oven. Cook over medium heat, stirring occasionally, 10 minutes or until thoroughly heated. Serve with toppings.
