Creamy Dilled Cucumber Salad


Cucumbers are another of summers fresh bounty that I have been enjoying a lot lately. It's because we have a bartering system going on with our neighbor. We give him tomatoes and then he gives us cucumbers.

I really like cucumbers on warm summer days as they are nice and juicy and cold from the fridge. But every once in a while it is nice to try something different. And this cool and creamy cucumber salad is a great way to do so. (makes 4 servings)

Ingredients:
1 large cucumber (sliced)
1/4 cup red onion (sliced)
1/4 cup sour cream
1 tablespoon lemon juice
1 teaspoon sugar (optional)
1 handful dill (chopped)
salt and pepper to taste

Directions:
1. Mix everything and chill in the fridge for at least 30 minutes.

I've been meaning to give you the island salad recipe. Here it is:

2 med cucumbers - cut 3 inch long sections
1 cup red onion - diced
1 cup tomato - diced
2 cups red wine vinegar
2/3 cup veg oil
8 tsp jerk seasoning (I think I adjusted this amount)
salt
8 tsp dill weed (I think I adjusted this amount also)

Mix the onion, cucumber and tomatoes in a no reactive bowl.

Mix all of the liquid stuff and the spices.

Pour the liquid mix on the cucumber mix. Cover the bowl and refrigerate at least 4 hours.

I have to make something for my sisters on Saturday and this may be perfect. Of course will need to multiply the recipie as we will be feeding a small crowd.
